Mama’s Healthy Meatloaf

(makes 2 loaves but makes great leftovers!)

Ingredients
  

  • 1 lb ground turkey breast
  • 1 lb extra lean ground beef
  • 1 onion chopped
  • 1 red bell pepper chopped
  • ½ jar salsa
  • 1 egg
  • 2 egg whites
  • 1 cup whole wheat bread crumbs
  • Salt
  • Pepper
  • Ketchup

Instructions
 

  • Preheat oven 400 degrees
  • In large bowl, combine all ingredients (EXCEPT KETCHUP). Mix well and place in a lightly greased 5x9 loaf pan
  • Cook for 1 hour
  • Top with ketchup and return to oven for 10 minutes
