Healthy Chicken Nachos
Serves 6 Total Time: 20 minutes
- 6 Corn Tortillas 1 lb shredded rotisserie chicken breast OR pre-cooked chicken breast 1 cup light shredded mozzarella cheese 1 can black beans drained and rinsed Olive oil spray Salt Pepper Cumin 1 cup chopped red onions 1 chopped bell pepper 3 chopped tomatoes 1 avocado Pickled jalepenos (to taste) 1 cup nonfat plain Greek yogurt 1 handful of cleaned and roughly chopped parsley 1⁄4 cup chopped green onions
- Preheat oven to 375
- Lightly spray tortillas with olive oil and salt. Toast in oven forapproximately 5-7 minutes or until crispy.
- Top each tortilla with chicken, black beans, onions, and mozzarellacheese. Season with salt, pepper and cumin and return to oven for approximately 5 minutes or until cheese is melted.
- Add remaining toppings including dollop of plain nonfat Greek yogurt.
