Chicken Vegetable Hummus Wrap

  • 1 1/2 lbs boneless skinless chicken breasts
  • Salt and freshly ground black pepper
  • 6 Tbsp Balsamic Vinagrette
  • 4 Low carb wraps or lavash
  • 3/4 cup hummus
  • 3 cups chopped romaine lettuce
  • 2 medium roma tomatoes diced
  • 1 medium cucumber peeled and diced
  • 1/2 cup 2.5 oz reduced fat feta cheese, crumbled

Instructions

  • Cook chicken per your liking (grill, bake, boil) or buy pre-cooked!
  • To assemble wraps spread about 3 Tbsp hummus over each tortilla, top with chicken, lettuce, tomatoes, cucumber and feta cheese and wrap tortillas.
