Chicken Vegetable Hummus Wrap
- 1 1/2 lbs boneless skinless chicken breasts
- Salt and freshly ground black pepper
- 6 Tbsp Balsamic Vinagrette
- 4 Low carb wraps or lavash
- 3/4 cup hummus
- 3 cups chopped romaine lettuce
- 2 medium roma tomatoes diced
- 1 medium cucumber peeled and diced
- 1/2 cup 2.5 oz reduced fat feta cheese, crumbled
- Cook chicken per your liking (grill, bake, boil) or buy pre-cooked!
- To assemble wraps spread about 3 Tbsp hummus over each tortilla, top with chicken, lettuce, tomatoes, cucumber and feta cheese and wrap tortillas.
